'Direct to Consumer' (Not For Sale labeled) processing customers, you can now review & submit cut instructions using our Online Beef Processing Form!  The form asks all of the questions we'd ask were you to call us with your cut instructions.

Processing Price List

The large breed rates below apply to whole carcass under 900 lbs.  (A 900 lb, or heavier, whole carcass will have $25 per 1/4 beef added to invoicing.  The additional charge covers added labor and packaging material expenses.)

The small breed rate can be used for whole carcass under 600 lbs WHEN more than one small breed beef is scheduled for harvest at the same time.  Large breed rates will be used if a small breed is singularly scheduled for harvest.

1/4 Beef, large breed rate - $185.00  
                small breed rate - $110.00

1/2 Beef, large breed rate - $360.00 
                small breed rate - $210.00

Whole Beef, large breed rate - $700.00  
                      small breed rate - $400.00

The custom processing charge includes take-down, cutting, grinding, wrapping in poly and paper, and freezing.  Our processing fee also includes carcass offal disposal.

Official State Inspected Processing - $40.00 additional, per animal, for State required laboratory testing (outside service)

3rd Party (inspection labeled) processing customers, you can submit your instructions online using our Official Beef Processing Online Form!

Extra Handling Charges -

1/4, 1/3, or 1/2 Pound Patties - A $0.65 per pound processing charge applies.

Vacuum Packaging - By default we wrap meat in poly & paper.  An additional $0.80 per pound charge applies to product you select for vacuum packaging.  

The following requests require an extra handling charge of $25:

     30+ (age by month) Beef,

    Processing for all ground,

    1/3 or 1/8 carcass processing,

    small quantity packaging (ie. single steak packaging or 1/2 pound ground packaging),

    and retaining the hide for your own purposes.

What will I get?

Typically a quarter of beef will yield enough meat to feed a family of 4 (eating beef once a week) for 1 year.  If you eat beef more than once a week, you may want to consider a half.

Cut Option 1 - Full Variety

*40% of this option will be ground beef

Cuts in the Full Variety option include, but aren't limited to:

  • Tenderloin Filets - 2 per quarter
  • Porterhouse Steak - 2 per quarter
  • T-Bone Steak - 3-4 per quarter
  • Top Sirloin Steak - 4-5 per quarter
  • Ribeye Steak - 5-6 per quarter
  • Sirloin Tip Steak - 4-6 per quarter
  • Sirloin Tip Roast - 1 per quarter
  • Tri-Tip Roast or Flank Steak (only available on 1/2 or whole beef orders)
  • Brisket (only available on 1/2 or whole beef orders)
  • Short Ribs (Korean Style, BBQ, or Braising Style - Braising is standard) - 5 to 7 lbs per quarter
  • Blade Chuck Roast - 4-5 per quarter
  • Eye of Round Roast - 1 per quarter
  • Round Steak - 6-8 per quarter
  • Round Rump Roast - 6-8 per quarter
  • Arm Chuck Roast Roast - 2 per quarter
  • Ground Beef - approx. 50 pounds per quarter
  • Bones for soup or dogs

Cut Option 2 - Best Cuts & Ground Beef

*50-60% of this option will be ground beef

Cuts in the Best Cuts & Ground Beef option include, but aren't limited to:

  • Tenderloin Filets
  • Porterhouse Steak
  • T-Bone Steak
  • Top Sirloin Steak 
  • Ribeye Steak
  • Chuck Roast
  • Eye of Round Roast
  • Ground Beef
  • Bones for soup or dogs

Cut Option 3 - "I don't have time!" Option

*70% of this option will be ground beef

Cuts in the "I don't have time!" option include, but aren't limited to:

  • Tenderloin Filets
  • Porterhouse Steak
  • T-Bone Steak
  • Top Sirloin Steak
  • Ribeye Steak
  • Tri-Tip Roast or Flank Steak (only available on 1/2 or whole beef orders)
  • Ground Beef
  • Bones for soup or dogs
